THREE: Using a sharp chef’s knife, trim a thin lengthwise slice off zucchini to create a flat surface. Place zucchini cut side down and carefully cut lengthwise into thin, even slices. (Each zucchini should yield about 8 uniform slices. The outer-most slices won’t be useful since they’re curved and uneven.)

FOUR: Fill a shallow saucepan halfway with water. Bring to a boil, then reduce heat to medium-low and slip zucchini into saucepan. Simmer gently for 2 minutes, then drain. Fill a large bowl or refill saucepan with cool water and add zucchini. Soak for 5 minutes, drain and set aside.
